Why when I spread the dough ball it breaks in the middle? I used a medium strength flour and the ball was just taken out of the fridge.
ANSWER
If kneading breaks during spreading it is probably processed at low temperature. If the problem persists it could be caused by the use of a too strong flour. In this case we suggest you to use SPECIAL flour of Molino Quaglia that blend the right strength with an excellent extensibility.
